A robust, spicy organic hard cheese with an intense, full-bodied flavor, made from pure organic milk from cows that feed exclusively on grass and hay from natural pastures. During a maturation period of at least 4–5 months, it develops its distinctive, unmistakable flavor through regular treatment with a secret herbal brine.
