A robust, spicy hard cheese with an intense, full-bodied flavor, made from milk from cows that feed exclusively on grass and hay from natural meadows. During a maturation period of at least 4–5 months, it develops its distinctive, unmistakable flavor through regular treatment with a secret herbal brine.
