This Aargau buffalo cheese from the Berglinde cheese dairy in Buttwil is made from 100% thermized buffalo milk and produced in accordance with Swiss organic regulations. The milk comes from the Villiger family’s organic farm in Sins, where the water buffalo are raised without concentrated feed or silage and, with their frugal, hardy nature, are ideally suited to natural farming practices. This rich milk is used to create a full-bodied semi-hard and cream cheese with at least 55% fat in dry matter, a light, creamy texture, and a well-balanced, savory flavor.
