This mature Gruyère comes from the Neuchâtel Jura at 1000 m above sea level. It convinces with its strong spicy character, a long sweet and salty finish and a remarkable variety of aromas. Compared to Gruyère, which has matured for 18 months, the dough is a little drier, but the aroma is even more concentrated and rich in finesse - a real treat for lovers of strong mountain cheeses.
