The Alpine cheese from Alp Heuboden (Glarus) is crafted high above Ennenda, with sweeping views over the Glarnerland – a place where summer pastures, clear mountain air and hands-on alpine craft come together in every wheel. Made on the alp from fresh raw alpine milk and cared for with pride by the people up there, it tastes wonderfully honest and “alive”: clean, grassy and gently herbal at first, then steadily growing more savoury and expressive as it matures.
